ritual cacao, miso, buckwheat and chia brownies
These are INSANELY good and I don’t say that lightly. I love a brownie and they have to be GOOD! Totally inspired by my great friend Dorthe Thomas who made these and I have only slightly adapted them.
These are rich but also weirdly light. Boosted with SOOO much goodness from the gut loving miso, protein boosting egg and chia seeds, calming and polyphenol rich ritual cacao and gluten free buckwheat flour.

Ingredients
100g butter
80g ritual cacao
170g light brown muscavado sugar
2 tsp vanilla extract
3 eggs
120g buckwheat flour
1 tablespoon miso paste
15g chia seeds
1 tbsp black sesame seed tahini paste (optional)
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
INSTRUCTIONS
Pre heat the oven to 180, line a tin with non stick silicone paper
Start by melting the butter and chocolate together in a bowl over a pan of boiling water. When melted add in the miso, tahini paste and vanilla and sugar and mix together.
Once the chocolate has cooled add in the eggs and whisk for a couple of minutes until lighter,
Next stir through the flour, raising agents and chia - fold together
Pour into the tin and bake for 10-12 ish minutes until just set - they are best slightly squishy.
Allow to cool on a wire rack.
They should be fudgey and dense and you don't need them to be big - you should manage to get at least 16 from this mix.
